Ingredients
3 large eggs
1 cup granulated sugar
1 cup packed light brown sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 1/2 cups self-rising flour
1 cup chopped pecans
Instructions
STEP 1: PREPARE THE OVEN AND PAN
Preheat your oven to 350°F (175°C).
Grease and flour a 9×13-inch baking pan or line it with parchment paper.
STEP 2: MAKE THE BATTER
In a large mixing bowl, beat the eggs until frothy. Add the granulated sugar, brown sugar, vegetable oil, and vanilla extract. Mix well until smooth.
Gradually add the self-rising flour, stirring until just combined. Fold in the chopped pecans.
STEP 3: BAKE
Pour the batter into the prepared pan, spreading it evenly with a spatula.
Bake in the preheated oven for 25-30 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
STEP 4: COOL AND SERVE
Let the pecan bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Slice into squares or bars and serve.
