- 1 cup (226g) unsalted butter, softened
- 7 oz (200g) almond paste, crumbled
- ½ cup (100g) granulated sugar
- 2 large egg whites, room temperature
- 1 teaspoon almond extract
- 1½ cups (180g) all-purpose flour
- ½ cup (60g) powdered sugar
- ½ teaspoon salt
- ½ cup (50g) sliced almonds for garnish
Instructions
- Preheat Oven & Prepare Baking Sheets: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
- Cream Butter & Almond Paste: In a large bowl, cream together the softened butter, crumbled almond paste, and granulated sugar until light and fluffy, about 2-3 minutes.
- Add Egg White & Extract: Beat in the egg whites and almond extract until just combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, powdered sugar, and salt. Gradually add to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Scoop, Garnish & Bake: Scoop dough onto prepared baking sheets. Flatten slightly and top each with sliced almonds, pressing gently. Bake for 10-12 minutes, or until edges are golden brown.
