- 2 scallions, thinly sliced

Instructions
- 1. Roast the Sweet Potatoes: Preheat oven to 400°F (200°C). Wash and pierce sweet potatoes with a fork. Roast for 45-70 minutes until very tender. Slice lengthwise and fluff the flesh.
