Ingredients
Scale
- 8–10 fresh sausages (Italian, bratwurst, or desired type)
- 1 tbsp olive oil
- 1 medium onion, finely minced
- 3 cloves garlic, minced
- 1 1/2 cups ketchup
- 1/2 cup brown sugar, packed
- 1/4 cup apple cider vinegar
- 2 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup water or chicken broth
- Optional: 1/2 tsp liquid smoke
- Fresh parsley or green onions, chopped (for garnish)
Instructions
- 1. Sear the Sausages: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sausages and sear for 3-5 minutes per side until golden brown. Remove and set aside.
- 2. Sauté Aromatics: Reduce heat to medium. Add minced onion to the pan and sauté for 3-4 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
- 3. Build the Sauce: Stir in ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard, smoked paprika, cayenne pepper (if using), salt, pepper, and liquid smoke (if using). Whisk until combined and bubbling gently.
- 4. Simmer Sausages: Return seared sausages to the pan. Add water or broth. Bring to a gentle simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until sausages are cooked through and tender. Stir occasionally.
- 5. Finish and Serve: Uncover and simmer for an additional 5-10 minutes if a thicker glaze is desired. Taste and adjust seasonings. Garnish with fresh parsley or green onions before serving.
