- 1 cup fresh blueberries, rinsed
- 1/2 cup shelled pistachios, roasted and lightly salted (roughly chopped if large)
- 1/2 cup crumbled feta cheese (or goat cheese)
- 3 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon honey or maple syrup (optional)
- 1/2 teaspoon Dijon mustard
- 1 tablespoon fresh mint or basil, chopped (optional)
- Salt and freshly ground black pepper, to taste
Instructions
- Prep Your Ingredients: Wash and dry greens, rinse blueberries, prepare pistachios and cheese. Whisk together all dressing ingredients (olive oil, lemon juice, honey/maple syrup, Dijon, herbs, salt, pepper) in a small bowl.
