  • 1 cup fresh blueberries, rinsed
  • 1/2 cup shelled pistachios, roasted and lightly salted (roughly chopped if large)
  • 1/2 cup crumbled feta cheese (or goat cheese)
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey or maple syrup (optional)
  • 1/2 teaspoon Dijon mustard
  • 1 tablespoon fresh mint or basil, chopped (optional)
  • Salt and freshly ground black pepper, to taste

Instructions
