- ¾ cup granulated sugar
- ¾ cup packed light brown sugar
- 1 large egg
- 1 egg yolk
- 2 teaspoons pure vanilla extract

- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups Cadbury Mini Eggs, roughly chopped or halved, plus more for topping
- ½ cup semi-sweet chocolate chips (optional)
Instructions
- Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Beat in the whole egg, then the egg yolk, one at a time, mixing well after each. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined.
- Gently fold in the chopped Cadbury Mini Eggs and optional chocolate chips until evenly distributed.
- Scoop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart. Press extra Mini Eggs onto the tops of the dough balls if desired.
- Bake for 9-12 minutes, or until edges are golden brown and centers are set but still look slightly soft.
- Let cookies cool on baking sheets for 5-10 minutes before transferring to a wire rack to cool completely.
