- 1 box (15.25 oz) Yellow or White Cake Mix
- 1 cup Unsalted Butter, melted and slightly cooled
- 1 cup Light Brown Sugar, packed
- 2 Large Eggs, room temperature
- 1 tsp Vanilla Extract
- 1 cup Chopped Toffee Bits (such as Heath or Skor)
- Optional: 1/2 cup Semi-sweet Chocolate Chips (for a rich twist)
Instructions
- Prep: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
- Mix Base: In a large mixing bowl, combine the cake mix, brown sugar, melted butter, eggs, and vanilla. Stir until a thick, smooth batter forms.
- Add Crunch: Fold in 3/4 cup of the toffee bits (and chocolate chips if using).
- Spread: Transfer the batter to the prepared dish, spreading it evenly to the corners. Sprinkle the remaining 1/4 cup of toffee bits on top.
- Bake: Bake for 25–30 minutes until the edges are golden brown and a toothpick comes out clean.
- Cool: Allow the bars to cool completely in the pan before slicing. This is crucial for the toffee to set!
Notes
For a richer flavor, use a “Butter Pecan” cake mix instead of yellow. To keep them chewy, do not overbake!
