- 2 cups cooked chicken, shredded or diced
- 1 ripe avocado, mashed
- 2 tablespoons mayonnaise
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder

- 1/8 teaspoon black pepper (or to taste)
- 4 slices sturdy bread (sourdough, brioche, or Texas toast recommended)
- 4 slices cheese (Cheddar, Monterey Jack, Provolone, or a blend)
- 1–2 tablespoons mayonnaise or butter, for grilling (for the outside of the bread)
- Optional: finely minced red onion, fresh cilantro, a squeeze of lime juice
Instructions
- Prepare Chicken Mixture: In a medium bowl, combine cooked chicken, mashed avocado, 2 tablespoons mayonnaise, garlic powder, onion powder, salt, and pepper. Stir until well combined. Fold in any optional add-ins.
- Assemble Sandwiches: Spread the chicken-avocado mixture evenly on two slices of bread. Top with cheese slices. Place the remaining bread slices on top. Spread a thin layer of mayonnaise or butter on the outside of each sandwich.
- Grill Sandwiches: Heat a non-stick skillet or griddle over medium heat. Place sandwiches, mayonnaise-side down, in the hot pan. Cook for 3-5 minutes per side, until bread is golden brown and crispy, and cheese is melted and gooey. Adjust heat as needed to prevent burning.
