- 2 slices sturdy bread (sourdough, ciabatta)
- 2–3 tablespoons prepared pesto
- 1.5–2 cups cooked, shredded chicken
- 2 slices provolone, mozzarella, or Monterey Jack cheese
- Optional: 1 tbsp butter or olive oil for cooking
- Optional: roasted red peppers, spinach, or sun-dried tomatoes
Instructions
- Prepare Chicken: If not already cooked, poach or pan-fry chicken breasts, then shred.
- Assemble Sandwich: Spread pesto on both bread slices. Layer chicken, cheese, and any optional add-ins on one slice. Top with the second bread slice.
- Cook: Heat a non-stick pan or panini press over medium heat. Add butter/oil if using a pan. Cook sandwich for 3-5 minutes per side, pressing firmly, until golden and cheese is melted.
