- 2 English or Persian Cucumbers, large
- 1.5 cups Cooked Chicken, finely diced or shredded
- 1/2 cup Mayonnaise (or Greek yogurt/vegan mayo)
- 1/4 cup Celery, finely diced
- 1 tbsp Red Onion, very finely minced
- 1 tbsp Fresh Dill, chopped
- 1 tsp Lemon Juice, fresh squeezed
- 1/4 tsp Salt, or to taste
- 1/8 tsp Black Pepper, or to taste
Instructions
- Prepare Cucumbers: Wash and dry cucumbers. Using a mandoline or vegetable peeler, slice them lengthwise into thin strips (about 1/16 to 1/8 inch thick). Lay slices on paper towels and blot dry to remove excess moisture.
- Mix Chicken Salad: In a medium bowl, combine the cooked chicken, mayonnaise, celery, red onion, fresh dill, lemon juice, salt, and pepper. Mix well until all ingredients are thoroughly coated. Taste and adjust seasonings as needed.
- Assemble Roll Ups: Lay a cucumber slice flat. Place about 1-2 teaspoons of chicken salad onto one end of the cucumber slice. Carefully and tightly roll the cucumber around the filling. Place seam-side down on a serving platter. Repeat with remaining slices and filling.
- Chill and Serve: Cover the platter and refrigerate the roll ups for at least 15-30 minutes to allow flavors to meld and to firm them up. Serve chilled and enjoy!
