- 2 cups chopped romaine lettuce
- 1/2 cup halved cherry tomatoes
- 1/4 cup thinly sliced red onion
- 4 large flour tortillas
- Optional: Vegan Parmesan or nutritional yeast for topping

- 1. Prepare the Chickpeas: Drain and rinse the chickpeas. Mash about two-thirds of them in a bowl with a fork, leaving the rest whole for texture.
- 2. Make the Creamy Caesar Filling: In a separate bowl, whisk together vegan mayonnaise, Dijon mustard, lemon juice, minced garlic, nutritional yeast, smoked paprika, salt, and pepper. Add the mashed and whole chickpeas, chopped romaine, cherry tomatoes, and red onion. Fold until well combined.
- 3. Assemble the Wraps: Lay a tortilla flat. Spoon a generous amount of filling down the center. Fold in the top and bottom edges, then roll tightly from one side to create a wrap. Repeat with remaining tortillas.
