  • 1 cup fresh flat-leaf parsley, finely minced
  • 1/2 cup fresh cilantro, finely minced
  • 4 cloves garlic, minced
  • 1/4 cup red onion, finely diced
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon red pepper flakes (or to taste)
  • Salt and freshly ground black pepper to taste
  • 4 cups cooked rice, quinoa, or cauliflower rice, for serving
  • Optional toppings: cherry tomatoes, cucumber, avocado, lime wedges

Instructions

  • Prepare the Chimichurri: In a medium bowl, combine the minced parsley, cilantro, garlic, red onion, red pepper flakes, red wine vinegar, and a generous pinch of salt and pepper. Slowly whisk in the olive oil until well combined. Set aside to allow flavors to meld.
  • Cook the Ground Beef: Heat a large skillet over medium-high heat. Add ground beef, breaking it up slightly. Let it sear undisturbed for 3-4 minutes to develop a crust. Break up further and cook until browned, about 5-7 minutes. Drain excess fat and season with salt and pepper.
