- 1 cup fresh flat-leaf parsley, finely minced
- 1/2 cup fresh cilantro, finely minced
- 4 cloves garlic, minced
- 1/4 cup red onion, finely diced
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1/2 teaspoon red pepper flakes (or to taste)
- Salt and freshly ground black pepper to taste
- 4 cups cooked rice, quinoa, or cauliflower rice, for serving
- Optional toppings: cherry tomatoes, cucumber, avocado, lime wedges

- Prepare the Chimichurri: In a medium bowl, combine the minced parsley, cilantro, garlic, red onion, red pepper flakes, red wine vinegar, and a generous pinch of salt and pepper. Slowly whisk in the olive oil until well combined. Set aside to allow flavors to meld.
- Cook the Ground Beef: Heat a large skillet over medium-high heat. Add ground beef, breaking it up slightly. Let it sear undisturbed for 3-4 minutes to develop a crust. Break up further and cook until browned, about 5-7 minutes. Drain excess fat and season with salt and pepper.
- Assemble the Bowls: Divide the cooked rice (or chosen base) among four serving bowls. Top each with a generous portion of the seasoned ground beef.
- Garnish and Serve: Spoon a hearty amount of chimichurri over the beef. Add any desired optional toppings like cherry tomatoes, cucumber, or sliced avocado. Serve immediately.
