- 1.5 lbs ground beef (80/20 or 90/10)
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
- 1 cup milk (whole or 2%)
- 1 (10 oz) package frozen mixed vegetables (peas, carrots, corn, green beans), unthawed
- 1.5 cups shredded sharp cheddar cheese, divided
- 1 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- 1 (32 oz) bag frozen tater tots
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- In a large skillet over medium-high heat, cook ground beef until no longer pink; drain excess grease. Add chopped onion and cook until softened, about 3-5 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
- Transfer the beef mixture to a large mixing bowl. Add cream of mushroom soup, milk, frozen mixed vegetables, 1 cup of shredded cheddar cheese, salt, pepper, garlic powder, and onion powder. Stir until well combined.
- Pour the mixture into the prepared baking dish and spread evenly.
- Arrange frozen tater tots in a single layer over the top of the filling.
- Bake for 30-40 minutes, or until the casserole is bubbly around the edges and the tater tots are golden brown and crispy. If desired, sprinkle the remaining 0.5 cup cheddar cheese over the hot tater tots during the last 5 minutes of baking for extra cheesiness.
