- 1 cup (225g) full-fat cottage cheese
- 1/2 cup (128g) natural peanut butter (creamy or crunchy)
- 2–3 tablespoons maple syrup (or preferred sweetener, to taste)
- 1 ½ cups (255g) chocolate chips (dark, milk, or sugar-free)
- 2 tablespoons coconut oil, divided
- Optional: Pinch of flaky sea salt for topping
Instructions
- Line a 12-cup muffin tin with paper or silicone cupcake liners.
- In a food processor or high-speed blender, combine cottage cheese, peanut butter, and maple syrup. Blend until completely smooth and creamy, scraping down sides as needed.
- In a microwave-safe bowl, melt 1 cup of chocolate chips with 1 tablespoon of coconut oil in 30-second intervals, stirring until smooth.
- Spoon 1-2 teaspoons of melted chocolate into the bottom of each liner, spreading up the sides slightly. Freeze for 5-10 minutes to set.
- Spoon 1-2 tablespoons of the cottage cheese peanut butter filling into each set chocolate cup.
- Melt the remaining 1/2 cup chocolate chips with the remaining 1 tablespoon coconut oil until smooth.
- Pour the melted chocolate over the filling, ensuring it covers completely. Tap the tin gently to smooth. Sprinkle with sea salt, if desired.
- Refrigerate for at least 30-60 minutes, or until completely set.
