- 8 oz fettuccine or other pasta of choice
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1/2 medium onion, finely diced
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 1 1/2 cups heavy cream
- 4 oz cream cheese, softened
- 1 cup freshly grated Parmesan cheese, plus more for serving
- 1/4 tsp ground nutmeg (freshly grated if possible)
- Salt and freshly cracked black pepper to taste
- 1/2 cup reserved pasta water (or more, as needed)
- Fresh parsley or basil, chopped (for garnish, optional)
Instructions
- 1. Cook Pasta: Bring a large pot of generously salted water to a boil. Add pasta and cook according to package directions until al dente. Reserve 1-2 cups of pasta water, then drain.
- 2. Sauté Aromatics: In a large skillet or Dutch oven, melt butter and olive oil over medium-low heat. Add diced onion and cook until softened (3-5 minutes). Add minced garlic and cook for 1 minute until fragrant.
- 3. Build the Sauce: Reduce heat to low. Stir in tomato paste and cook for 1 minute. Pour in heavy cream and bring to a gentle simmer, whisking. Add softened cream cheese and whisk until smooth.
- 4. Add Cheese & Season: Stir in nutmeg, salt, and pepper. Gradually add Parmesan cheese, whisking until fully melted and smooth. If too thick, add reserved pasta water, tablespoon by tablespoon, until desired consistency is reached.
- 5. Combine & Serve: Add drained pasta to the sauce, tossing gently to coat evenly. Serve immediately, garnished with extra Parmesan and fresh herbs if desired.
