- 1 cup (120g) all-purpose flour
- 2 large eggs, room temperature

- For Coating:
- 1/2 cup (100g) granulated sugar
- 1 tablespoon ground cinnamon

- Prepare the Choux Pastry Dough: In a saucepan, combine water, butter, 1 tbsp sugar, and salt. Bring to a boil. Remove from heat, add flour all at once, and stir vigorously until a dough ball forms. Return to low heat, stir for 1-2 minutes until a film forms. Transfer to a bowl and cool for 5-10 minutes.
- Incorporate Eggs and Vanilla: Add eggs one at a time, mixing well after each, until the dough is smooth and glossy. Stir in vanilla extract.
- Pipe the Churro Bites: Transfer dough to a piping bag with a star tip. Lightly grease your air fryer basket. Pipe 1 to 1.5-inch bites, leaving space between each.
- Air Fry to Golden Perfection: Preheat air fryer to 350°F (175°C). Air fry bites for 8-12 minutes, shaking or flipping halfway through, until deeply golden and crispy. Work in batches.
