- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1 tbsp olive oil (optional, for sautéing)
- 1 large yellow onion, chopped
- 2 large carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups low-sodium chicken broth
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and freshly ground black pepper to taste
- 1/4 cup fresh lemon juice (from about 1–2 lemons)
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
Instructions
- Step 1: Prepare Ingredients. Pat chicken dry and season generously with salt and pepper. Chop onion, carrots, and celery. Mince garlic.
- Step 2: Combine in Crockpot. Place seasoned chicken at the bottom of a 6-quart (or larger) crockpot. Add chopped onion, carrots, celery, and minced garlic over the chicken. Sprinkle with dried oregano and thyme. Pour in chicken broth.
- Step 3: Cook. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is very tender and easily shreddable.
- Step 4: Shred Chicken & Finish. Carefully remove chicken from the crockpot and shred it using two forks. Return shredded chicken to the pot. Stir in fresh lemon juice, chopped dill, and chopped parsley.
- Step 5: Adjust Seasoning & Serve. Taste the soup and adjust salt and pepper if needed. Serve hot with optional crusty bread or a side salad.
