- 2 English cucumbers, sliced
- 2 cups cherry or grape tomatoes, halved
- 8 oz fresh mozzarella (ciliegine or ovolini), drained and halved if large
- 1/4 cup fresh basil leaves, torn
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic glaze (store-bought or homemade)
- Sea salt, to taste
- Freshly ground black pepper, to taste
Instructions
- 1. Prepare Ingredients: Wash and slice cucumbers into 1/4-inch rounds or half-moons. Halve the cherry tomatoes. Drain the fresh mozzarella and halve larger pieces if necessary.
- 2. Combine: In a large bowl or on a serving platter, gently combine the sliced cucumbers, halved cherry tomatoes, and fresh mozzarella.
- 3. Dress: Drizzle evenly with extra virgin olive oil and balsamic glaze.
- 4. Season: Season generously with sea salt and freshly ground black pepper to taste.
- 5. Garnish & Serve: Just before serving, scatter the torn fresh basil leaves over the salad. Serve immediately or chill for 15-30 minutes for flavors to meld.
