- 1.5 lbs boneless, skinless chicken breasts (or thighs)
- 3 tbsp fresh lime juice (from 2–3 limes)
- 2 tbsp olive oil
- 1/4 cup fresh cilantro, chopped
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika (optional, but recommended)
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- 2 ripe avocados, diced
- Extra cilantro or lime wedges for garnish (optional)
Instructions
- Prepare the Chicken: Pat chicken breasts dry. If thick, butterfly or pound to 1/2-inch thickness for even cooking.
- Whisk the Marinade: In a bowl, combine lime juice, olive oil, chopped cilantro, chili powder, cumin, garlic powder, paprika, salt, and pepper.
- Marinate Chicken: Place chicken in a dish or bag, pour marinade over, ensuring it’s coated. Refrigerate for 30 minutes to 2 hours.
- Cook Chicken:
- Pan-Sear: Heat oiled skillet over medium-high. Sear chicken 4-6 mins per side until golden and cooked (165°F/74°C).
- Baked: Bake at 400°F (200°C) for 18-25 mins.
- Grilled: Grill on medium-high for 4-7 mins per side.
- Dice Avocado: While chicken cools, dice ripe avocados. Squeeze a little lime juice over them.
- Assemble & Serve: Slice rested chicken, top with diced avocado, and garnish with extra cilantro or lime wedges. Serve immediately.
