  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika (optional, but recommended)
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • 2 ripe avocados, diced
  • Extra cilantro or lime wedges for garnish (optional)

Instructions

  • Prepare the Chicken: Pat chicken breasts dry. If thick, butterfly or pound to 1/2-inch thickness for even cooking.
  • Whisk the Marinade: In a bowl, combine lime juice, olive oil, chopped cilantro, chili powder, cumin, garlic powder, paprika, salt, and pepper.
  • Marinate Chicken: Place chicken in a dish or bag, pour marinade over, ensuring it’s coated. Refrigerate for 30 minutes to 2 hours.
  • Cook Chicken:
  • Pan-Sear: Heat oiled skillet over medium-high. Sear chicken 4-6 mins per side until golden and cooked (165°F/74°C).
  • Baked: Bake at 400°F (200°C) for 18-25 mins.
  • Grilled: Grill on medium-high for 4-7 mins per side.
  • Dice Avocado: While chicken cools, dice ripe avocados. Squeeze a little lime juice over them.
