  • Total Time: 5 minutes
  • Yield: ¾ cup 1x

Description

This bright, zesty, and effortlessly emulsified vinaigrette will elevate all your meals. It’s the perfect silky-smooth dressing to coat every ingredient beautifully without ever being greasy.

Ingredients

Scale
  • ¼ cup fresh lemon juice (about 12 lemons)
  • ¾ cup extra virgin olive oil
  • 12 teaspoons honey or maple syrup (to taste)
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic, minced
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper, or to taste
  • Optional: 1 tablespoon fresh herbs (e.g., parsley, dill, chives), chopped

Instructions

  • 1. Combine Base Ingredients: In a medium bowl or a jar with a tight-fitting lid, combine the fresh lemon juice, honey (or maple syrup), Dijon mustard, and minced garlic.
  • 2. Season: Add the salt and freshly ground black pepper. Whisk vigorously or shake well until everything is combined.
  • 3. Emulsify: While continuously whisking (or shaking), slowly drizzle in the extra virgin olive oil in a thin, steady stream. Continue until the dressing is fully emulsified and appears creamy and smooth.
  • 4. Taste & Adjust: Taste the vinaigrette and adjust seasonings as needed. Add more honey for sweetness, lemon for tang, or salt/pepper to your preference.
  • 5. Add Herbs (Optional): Stir in any fresh chopped herbs if using.
  • 6. Serve & Store: Use immediately, or store in an airtight container in the refrigerator for up to 5-7 days. Shake or whisk well before each use.
