  • 1 cup all-purpose flour
  • 2 large eggs, whisked with 1 tbsp water or milk
  • 2 cups Panko breadcrumbs
  • Salt and freshly ground black pepper, to taste
  • 8 slider buns (brioche or potato recommended)
  • 8 slices American cheese
  • Neutral oil for frying (canola, vegetable, or peanut)
  • For the Tartar Sauce:
  • 1/2 cup full-fat mayonnaise
  • 2 tbsp dill pickle relish (or finely minced dill pickles)
  • 1 tbsp fresh dill, chopped (optional)
  • 1 tbsp fresh lemon juice

Instructions

  • Prepare the Fish: Pat fish fillets completely dry, then season generously with salt and pepper. Cut into slider-sized pieces.
  • Set Up Breading Station: Place seasoned flour in one shallow dish, whisked eggs in a second, and seasoned Panko breadcrumbs in a third.
  • Bread the Fish: Dredge each fish piece in flour, then egg wash, then Panko, pressing to coat well. Place on a wire rack.
  • Fry the Fish: Heat 1 inch of oil in a skillet to 350-375°F (175-190°C). Fry fish in batches for 2-3 minutes per side until golden brown and cooked through. Drain on a wire rack and season with salt.
  • Prepare the Tartar Sauce: Combine mayonnaise, dill pickle relish, fresh dill, and lemon juice. Stir well.
  • Toast the Buns (Optional): Lightly toast slider buns in a dry skillet or under the broiler.
  • Assemble the Sliders: Spread tartar sauce on the bottom bun. Top with a hot fish fillet, a slice of American cheese, and the top bun. Serve immediately.
