- 1 lb firm white fish fillets (cod, pollock, haddock), cut into 2×3 inch pieces
- 1 cup all-purpose flour
- 2 large eggs, whisked with 1 tbsp water or milk
- 2 cups Panko breadcrumbs
- Salt and freshly ground black pepper, to taste
- 8 slider buns (brioche or potato recommended)
- 8 slices American cheese
- Neutral oil for frying (canola, vegetable, or peanut)
- For the Tartar Sauce:
- 1/2 cup full-fat mayonnaise
- 2 tbsp dill pickle relish (or finely minced dill pickles)
- 1 tbsp fresh dill, chopped (optional)
- 1 tbsp fresh lemon juice
Instructions
- Prepare the Fish: Pat fish fillets completely dry, then season generously with salt and pepper. Cut into slider-sized pieces.
- Set Up Breading Station: Place seasoned flour in one shallow dish, whisked eggs in a second, and seasoned Panko breadcrumbs in a third.
- Bread the Fish: Dredge each fish piece in flour, then egg wash, then Panko, pressing to coat well. Place on a wire rack.
- Fry the Fish: Heat 1 inch of oil in a skillet to 350-375°F (175-190°C). Fry fish in batches for 2-3 minutes per side until golden brown and cooked through. Drain on a wire rack and season with salt.
- Prepare the Tartar Sauce: Combine mayonnaise, dill pickle relish, fresh dill, and lemon juice. Stir well.
- Toast the Buns (Optional): Lightly toast slider buns in a dry skillet or under the broiler.
- Assemble the Sliders: Spread tartar sauce on the bottom bun. Top with a hot fish fillet, a slice of American cheese, and the top bun. Serve immediately.
