- 4 boneless, skinless chicken thighs or breasts (approx. 1.5 lbs)
- 4 pineapple rings, fresh or canned (drained)
- 4 brioche buns or your preferred burger buns
- Lettuce leaves, for serving
- 1/4 red onion, thinly sliced, for serving
- For the Marinade:
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp fresh ginger, minced
- 2 cloves garlic, minced
- 1 tbsp rice vinegar or lime juice
- 1 tsp sesame oil (optional)
- For the Secret Sauce:
- 1/2 cup mayonnaise
- 1 tsp sriracha (or to taste)
- 1 tsp lime juice
- 1 tbsp fresh cilantro, chopped (optional)
Instructions
- Prep Chicken: If using chicken breasts, butterfly and pound to 1/2-inch thickness. Trim fat from thighs.
- Make Marinade: Whisk together soy sauce, brown sugar, ginger, garlic, rice vinegar, and sesame oil in a bowl.
- Marinate Chicken: Add chicken to marinade, ensuring it’s coated. Refrigerate 30 min-1 hour for breasts, 1-4 hours for thighs.
- Grill Pineapple: Preheat grill/grill pan to medium-high. Lightly oil pineapple and grill 2-3 mins per side until charred and tender.
- Cook Chicken: Remove chicken from marinade (discard excess). Grill chicken 4-7 mins per side, until internal temp reaches 165°F (74°C). Rest chicken for 5 mins.
- Make Secret Sauce: Combine mayonnaise, sriracha, lime juice, and cilantro (if using) in a small bowl.
- Assemble Burgers: Toast buns. Spread secret sauce on both halves. Layer lettuce, cooked chicken, grilled pineapple, and red onion. Serve immediately.
