  • For the Marinade:
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 tbsp rice vinegar or lime juice
  • 1 tsp sesame oil (optional)
  • For the Secret Sauce:
  • 1/2 cup mayonnaise
  • 1 tsp sriracha (or to taste)
  • 1 tsp lime juice
  • 1 tbsp fresh cilantro, chopped (optional)

Instructions

  • Prep Chicken: If using chicken breasts, butterfly and pound to 1/2-inch thickness. Trim fat from thighs.
  • Make Marinade: Whisk together soy sauce, brown sugar, ginger, garlic, rice vinegar, and sesame oil in a bowl.
  • Marinate Chicken: Add chicken to marinade, ensuring it’s coated. Refrigerate 30 min-1 hour for breasts, 1-4 hours for thighs.
  • Grill Pineapple: Preheat grill/grill pan to medium-high. Lightly oil pineapple and grill 2-3 mins per side until charred and tender.
  • Cook Chicken: Remove chicken from marinade (discard excess). Grill chicken 4-7 mins per side, until internal temp reaches 165°F (74°C). Rest chicken for 5 mins.
  • Make Secret Sauce: Combine mayonnaise, sriracha, lime juice, and cilantro (if using) in a small bowl.
