These high-protein crispy cottage cheese flatbread chicken wraps combine a wonderfully crispy and protein-packed flatbread with juicy, seasoned chicken and fresh fillings. It’s the perfect healthy weeknight meal that’s both satisfying and easy to prepare.

- 1 cup cottage cheese (full-fat or low-fat)
- 1 large egg
- 2 tablespoons all-purpose flour (or gluten-free alternative)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper to taste
- 1 lb boneless, skinless chicken breast or thighs, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon cumin
- ½ teaspoon chili powder
- Pinch of cayenne pepper (optional)
- Squeeze of fresh lime juice
- Assorted wrap fillings: lettuce, diced tomatoes, sliced red onion, avocado slices, salsa, shredded cheese, fresh cilantro (optional)
Instructions
- 1. Prepare the Cottage Cheese Flatbread: Preheat oven to 400°F (200°C). In a blender, combine cottage cheese, egg, flour, garlic powder, onion powder, salt, and pepper. Blend until very smooth. Pour onto a parchment-lined baking sheet, spreading into a thin 8×10-inch rectangle. Bake for 15-20 minutes until golden and set.
- 2. Cook the Seasoned Chicken: While flatbread bakes, toss chicken strips with olive oil, smoked paprika, cumin, chili powder, cayenne (if using), salt, and pepper. Heat a skillet over medium-high heat and cook chicken for 5-7 minutes until browned and cooked through. Finish with a squeeze of lime juice.
- 3. Assemble the Wraps: Once flatbread has cooled slightly, carefully peel it off the parchment. Cut into 2-4 wrap-sized pieces. Layer cooked chicken, lettuce, tomatoes, red onion, avocado, and any desired optional fillings onto each flatbread piece.
- 4. Roll and Serve: Tightly roll up the flatbread, tucking in the sides as you go. Serve your delicious high-protein wraps immediately!
