- 1.5 lbs boneless, skinless chicken thighs (or breast), cut into 1-inch pieces
- ¼ cup honey
- 3 tbsp fresh lime juice, divided (from 2–3 limes)
- 1 tsp lime zest
- 2 cloves garlic, minced
- 2 tbsp low-sodium soy sauce (or tamari for gluten-free)
- ½ tsp red pepper flakes (optional)
- 1 tbsp olive oil or vegetable oil
- 1 cup jasmine rice
- 1 ¾ cups water or chicken broth
- 2 ripe avocados, diced
- ½ cup fresh cilantro, chopped (or parsley)
- Salt and freshly ground black pepper to taste
Instructions
- In a medium bowl, combine honey, 2 tbsp lime juice, lime zest, garlic, soy sauce, and red pepper flakes. Add chicken, toss to coat, and marinate for 30 minutes to 2 hours in the refrigerator.
- Rinse rice under cold water until clear. Combine rice with water/broth in a saucepan. Bring to boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat, let stand covered 5-10 minutes, then fluff.
- Remove chicken from marinade, reserving marinade. Heat oil in a large skillet over medium-high. Sear chicken in batches until golden and cooked through, 4-5 mins per side. Remove chicken and let rest.
- Pour reserved marinade into a small saucepan, simmer until thickened into a glaze, 3-5 minutes. Toss cooked chicken with glaze.
- In a large bowl, combine cooked rice, diced avocado, chopped cilantro, and remaining 1 tbsp lime juice. Gently mix until slightly mashed. Season with salt and pepper.
- Serve avocado rice topped with glazed honey lime chicken. Garnish with extra cilantro or lime wedges.
