Description
Tender chicken with crispy skin, coated in a vibrant, sweet-tart strawberry-lemon glaze. This dish is an absolute showstopper that’s surprisingly easy to make.

- 4 bone-in, skin-on chicken thighs or drumsticks
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil (divided)
- 3 cloves garlic, minced
- 1.5 cups fresh strawberries, hulled and sliced
- 1 tbsp fresh lemon zest
- 2 tbsp fresh lemon juice
- 2 tbsp honey or maple syrup (adjust to taste)
- 1 sprig fresh thyme or rosemary (optional)
- Optional: pinch red pepper flakes
- Fresh basil or mint for garnish (optional)
Instructions
- Pat chicken dry, season with salt and pepper. Score skin if desired.
- Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear chicken skin-side down for 6-8 mins until golden and crispy. Flip and sear for 2-3 mins. Remove chicken; set aside.
- Reduce heat to medium. Add remaining 1 tbsp olive oil (or butter). Sauté minced garlic for 30 seconds. Add strawberries, lemon zest, lemon juice, honey, and optional herbs/red pepper flakes. Simmer 5-7 mins until strawberries soften and sauce thickens.
- Return chicken to skillet, spooning sauce over. Bake at 375°F (190°C) for 15-20 mins, until internal temperature reaches 165°F (74°C).
- Remove from oven, tent with foil, and rest for 5-10 minutes before serving. Garnish with fresh herbs if desired.
