  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved, or 1 large tomato, diced
  • 1/2 green bell pepper, thinly sliced or diced
  • 4 oz thinly sliced salami, chopped
  • 3 oz thinly sliced pepperoni, chopped
  • 3 oz thinly sliced ham, chopped
  • 4 oz provolone cheese, diced
  • 4 oz fresh mozzarella, diced
  • 1/4 cup sliced pepperoncinis
  • 1/4 cup pitted black olives, sliced (optional)
  • For the Dressing:
  • 1/2 cup mayonnaise
  • 3 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (or to taste)
  • Salt and freshly ground black pepper to taste

Instructions

  • 1. Prep Vegetables: Wash and chop romaine, thinly slice red onion, dice tomatoes, and slice bell pepper. Place all into a large mixing bowl.
  • 2. Prepare Meats & Cheese: Chop salami, pepperoni, and ham into bite-sized pieces. Dice provolone and mozzarella. Add these, along with pepperoncinis and olives, to the vegetable bowl.
  • 3. Build Dressing: In a separate small bowl, whisk together mayonnaise, red wine vinegar, oregano, red pepper flakes, salt, and pepper.
  • 4. Combine & Dress: Pour about two-thirds of the dressing over the salad ingredients. Toss gently with tongs until everything is well coated. Add more dressing if desired.
  • 5. Serve: Serve immediately for best crispness, or chill for 15-30 minutes to allow flavors to meld before serving.
