  • 1½ cups (170g) low-moisture shredded mozzarella cheese
  • 2 oz (56g) full-fat cream cheese, cut into cubes
  • ¾ cup (75g) fine-blanched almond flour
  • 1 large egg
  • 1 tsp garlic powder, divided
  • 1 tsp Italian seasoning, divided
  • ½ tsp baking powder
  • ¼ tsp fine sea salt, plus more to taste
  • ¼ cup (56g) unsalted butter, melted
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  • Prep Oven & Melt Cheeses: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. In a large microwave-safe bowl, combine mozzarella and cream cheese. Microwave in 30-second intervals (stirring between) until completely melted and smooth (approx. 1.5-2 mins).
  • Form the Dough: Stir the egg into the melted cheese mixture until fully combined. Add almond flour, ½ tsp garlic powder, ½ tsp Italian seasoning, baking powder, and ¼ tsp salt. Mix thoroughly until a uniform, slightly sticky dough forms.
  • Roll & Cut: Transfer dough to the prepared baking sheet. Place another piece of parchment paper on top and roll dough to an even ¼-inch thickness (approx. 9×12 inches). Remove top parchment and cut into 16-18 breadsticks with a pizza cutter or sharp knife. Separate slightly on the sheet.
  • Bake Breadsticks: Bake for 12-15 minutes, or until golden brown on the edges and firm to the touch.
  • Prepare Garlic Butter: While breadsticks bake, melt butter in a small bowl. Stir in remaining ½ tsp garlic powder, ½ tsp Italian seasoning, and a pinch of salt.
  • Brush & Finish: Remove breadsticks from oven. Generously brush with garlic butter. Return to oven for 2-3 minutes to allow butter to absorb and breadsticks to crisp slightly. Garnish with fresh parsley (if using) and serve warm.
