- 1.5 lbs mixed vegetables, such as bell peppers, zucchini, broccoli florets, carrots, and red onion, all chopped into 1-inch pieces
- 3 tablespoons extra virgin olive oil
- 4 cloves garlic, freshly minced
- 1/2 teaspoon flaky sea salt, plus more to taste
- 1/4 teaspoon freshly ground black pepper
- Pinch of red chili flakes (optional)
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme leaves, chopped
- 1 teaspoon fresh rosemary, minced
Instructions
- 1. Prepare Oven & Vegetables: Preheat your oven to 400°F (200°C). Wash and thoroughly dry your chosen vegetables. Chop them into roughly uniform, bite-sized pieces (about 1-inch) for even cooking. Line a large baking sheet with parchment paper.
- 2. Season the Vegetables: In a large mixing bowl, combine the chopped vegetables. Drizzle with olive oil, then add the minced garlic, sea salt, black pepper, and chili flakes (if using). Toss thoroughly with your hands or a large spoon until every piece is coated.
- 3. Arrange on Baking Sheet: Spread the seasoned vegetables in a single, even layer on the prepared baking sheet. Ensure there is ample space between pieces to prevent steaming. If necessary, use a second baking sheet to avoid overcrowding.
- 4. Roast: Place the baking sheet(s) in the preheated oven. Roast for 20-30 minutes, tossing the vegetables once halfway through, until they are tender-crisp and beautifully caramelized with golden-brown edges.
- 5. Finish & Serve: Remove the baking sheet from the oven. Sprinkle the freshly grated Parmesan cheese evenly over the hot vegetables. Return to the oven for another 3-5 minutes, or until the Parmesan is melted and slightly golden. Remove from oven and immediately sprinkle with the fresh chopped parsley, thyme, and rosemary. Toss gently to combine and serve warm.
