- 1 cup (90g) old-fashioned rolled oats (use gluten-free if needed)
- 1 cup (170g) pitted Medjool dates, packed
- 1 cup (100g) finely grated carrots (about 2 medium carrots)
- 1/2 cup (40g) unsweetened shredded coconut, plus more for rolling (optional)
- 1/2 cup (55g) pecans or walnuts, finely chopped
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- 1. Prep Ingredients: Pit the Medjool dates. Finely grate the carrots.
- 2. Process Dry & Dates: In a food processor, pulse rolled oats until coarsely ground. Add shredded coconut, pecans, cinnamon, nutmeg, and salt. Pulse once more to combine. Add pitted dates and vanilla extract. Process until mixture forms a sticky ball, scraping down sides as needed.
- 3. Add Carrots: Add the grated carrots to the food processor. Pulse a few times until the carrots are well incorporated and the mixture is cohesive. It should hold its shape when pressed.
- 4. Roll Bites: Scoop about 1 tablespoon of the mixture and roll into firm 1-inch balls.
- 5. Chill: Place bites on a parchment-lined plate or baking sheet. Refrigerate for at least 30 minutes to firm up.
- 6. Serve/Store: Optionally, roll chilled bites in extra shredded coconut or finely chopped nuts before serving. Store any leftovers in an airtight container in the refrigerator for up to 2 weeks, or freeze for longer storage.
