These refreshing no-bake frozen yogurt berry granola bars feature a crunchy granola base topped with creamy, tangy Greek yogurt and a vibrant berry swirl. They’re an easy, healthy, and satisfying treat perfect for any time of day.

- 1 ½ cups plain granola
- ¼ cup melted coconut oil
- 2 tbsp maple syrup
- 2 cups full-fat Greek yogurt
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- 1 cup mixed berries (fresh or frozen, thawed and lightly mashed)
- 1 tbsp lemon juice
Instructions
- In a bowl, combine granola, coconut oil, and maple syrup. Press firmly into an 8×8 inch parchment-lined pan. Freeze for 15 minutes.
- Whisk Greek yogurt, powdered sugar, and vanilla until smooth.
- In a separate bowl, lightly mash berries with lemon juice.
- Spread yogurt mixture over the granola base. Drop mashed berries over the yogurt and gently swirl with a knife.
- Freeze for at least 3-4 hours, or until solid. Lift from pan and cut into bars.
