  • Optional: 1/4 small red onion, finely diced
  • Optional: 1/2 jalapeño, deseeded and minced
  • Pinch of salt (to taste)
  • Optional: 1/2 teaspoon honey or agave nectar (if pineapple is not very sweet)

Instructions

  • Prep Pineapple: Remove skin and core from fresh pineapple, then cut into approximately 1/2-inch cubes.
  • Prep Cucumber: Wash cucumber and dice into similar-sized pieces as the pineapple.
  • Chop Herbs: Thoroughly wash and finely chop your chosen fresh herbs (mint or cilantro).
  • Combine: In a large mixing bowl, gently combine the cubed pineapple, diced cucumber, and chopped herbs. Add any optional ingredients like red onion or jalapeño at this stage.
  • Make Dressing: In a small separate bowl, whisk together the fresh lime juice, lime zest, and an optional pinch of salt and honey/agave.
  • Dress & Serve: Pour the dressing over the salad ingredients. Gently toss to combine, ensuring everything is lightly coated. For best flavor, chill for 15-30 minutes before serving.
