- 2 cups fresh pineapple, cubed
- 1 large English cucumber, diced or sliced
- 1/4 cup fresh mint or cilantro, chopped
- 2 tablespoons fresh lime juice (from 1–2 limes)
- 1 teaspoon lime zest
- Optional: 1/4 small red onion, finely diced
- Optional: 1/2 jalapeño, deseeded and minced
- Pinch of salt (to taste)
- Optional: 1/2 teaspoon honey or agave nectar (if pineapple is not very sweet)
Instructions
- Prep Pineapple: Remove skin and core from fresh pineapple, then cut into approximately 1/2-inch cubes.
- Prep Cucumber: Wash cucumber and dice into similar-sized pieces as the pineapple.
- Chop Herbs: Thoroughly wash and finely chop your chosen fresh herbs (mint or cilantro).
- Combine: In a large mixing bowl, gently combine the cubed pineapple, diced cucumber, and chopped herbs. Add any optional ingredients like red onion or jalapeño at this stage.
- Make Dressing: In a small separate bowl, whisk together the fresh lime juice, lime zest, and an optional pinch of salt and honey/agave.
- Dress & Serve: Pour the dressing over the salad ingredients. Gently toss to combine, ensuring everything is lightly coated. For best flavor, chill for 15-30 minutes before serving.
