- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (1 stick) unsalted butter, melted and cooled
- 2 large eggs, room temperature
- 1 cup buttermilk, room temperature (or homemade substitute)
- 1 tsp vanilla extract
- 1/4 tsp almond extract (optional)
- 1.5 cups mixed red berries (raspberries, chopped strawberries), fresh or frozen (tossed in 1 tbsp flour if frozen)
- Optional: 1/4 tsp natural pink food coloring (beet juice/powder)
Instructions
- Preheat oven to 375°F (190°C). Grease and flour a 9×13 inch baking dish.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together melted butter, eggs, buttermilk, vanilla extract, and almond extract (if using). Add pink food coloring if desired.
- Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are okay.
- Gently fold in the red berries.
- Pour batter into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before serving.
