Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (1 stick) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 cup buttermilk, room temperature (or homemade substitute)
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 1.5 cups mixed red berries (raspberries, chopped strawberries), fresh or frozen (tossed in 1 tbsp flour if frozen)
  • Optional: 1/4 tsp natural pink food coloring (beet juice/powder)

Instructions

  • Preheat oven to 375°F (190°C). Grease and flour a 9×13 inch baking dish.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together melted butter, eggs, buttermilk, vanilla extract, and almond extract (if using). Add pink food coloring if desired.
  • Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are okay.
  • Gently fold in the red berries.
  • Pour batter into the prepared baking dish and spread evenly.
  • Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before serving.
