  • 1/2 cup (60g) Unflavored Whey Protein Isolate
  • 1 tbsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 cup (220g) Plain Greek Yogurt (0% or full-fat)
  • 2 tbsp Maple Syrup or Honey (or sweetener of choice)
  • 1 cup (150g) Fresh or Frozen Blueberries
  • 1 tbsp Water (for blueberry swirl)
  • 1 tsp Sweetener (for blueberry swirl, optional)
  • 1 large Egg, whisked with 1 tbsp water (for egg wash)
  • Optional Toppings: Sesame seeds, rolled oats, everything bagel seasoning

Instructions

  • Prepare Blueberry Swirl: In a small saucepan, combine blueberries, 1 tbsp water, and 1 tsp sweetener. Cook over medium-low heat until blueberries break down and thicken into a jam-like consistency (5-7 mins). Let cool completely.
  • Combine Dry Ingredients: In a large bowl, whisk together flour, protein powder, baking powder, and baking soda.
  • Mix Wet Ingredients: In a separate bowl, whisk Greek yogurt and 2 tbsp sweetener until smooth.
  • Form Dough: Add wet ingredients to dry. Mix until shaggy dough forms. Turn onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  • Incorporate Swirl: Flatten dough into a rectangle. Spoon cooled blueberry mixture over two-thirds of the dough. Fold and gently knead a few times to create visible swirls.
  • Shape Bagels: Divide dough into 8 equal pieces. Roll each into a ball, then poke a hole in the center and stretch to form a bagel shape with a 1.5-2 inch hole.
  • Boil & Wash: Preheat oven to 400°F (200°C). Bring a large pot of water to a rolling boil. Boil bagels 2-3 at a time for 30 seconds per side. Remove, place on parchment-lined baking sheet, brush with egg wash, and add toppings.
