- 1 tbsp olive oil
- 1 lb ground beef (or lamb/turkey)
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1.5 cups beef broth
- 1 tsp dried thyme (or mixed Italian herbs)
- Salt and black pepper to taste
- 1 lb shelf-stable potato gnocchi
- 1 cup shredded cheddar cheese (or mozzarella/blend)
Instructions
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground meat and cook until browned, breaking it up with a spoon. Drain excess fat.
- Add onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes. Stir in minced garlic and tomato paste, cook for 1 minute until fragrant.
- Pour in beef broth and add dried thyme, salt, and pepper. Bring to a simmer, then reduce heat and cook for 5-7 minutes to thicken. Taste and adjust seasonings.
- Preheat oven to 375°F (190°C).
- Evenly spoon the gnocchi over the meat mixture in the skillet (or transfer to a 9×13 inch baking dish).
- Sprinkle the shredded cheese generously over the gnocchi.
- Bake for 20-25 minutes, or until the gnocchi is tender, filling is bubbly, and cheese is golden. For extra crispness, broil for 2-3 minutes at the end, watching carefully.
