  • 2 tbsp tomato paste
  • 1.5 cups beef broth
  • 1 tsp dried thyme (or mixed Italian herbs)
  • Salt and black pepper to taste
  • 1 lb shelf-stable potato gnocchi
  • 1 cup shredded cheddar cheese (or mozzarella/blend)

Instructions

  • Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground meat and cook until browned, breaking it up with a spoon. Drain excess fat.
  • Add onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes. Stir in minced garlic and tomato paste, cook for 1 minute until fragrant.
  • Pour in beef broth and add dried thyme, salt, and pepper. Bring to a simmer, then reduce heat and cook for 5-7 minutes to thicken. Taste and adjust seasonings.
  • Preheat oven to 375°F (190°C).
  • Evenly spoon the gnocchi over the meat mixture in the skillet (or transfer to a 9×13 inch baking dish).
