  • 6 large hard-boiled eggs, peeled and chopped
  • 2 ripe avocados, pitted and scooped
  • 2 tbsp fresh lemon juice
  • 1/4 cup red onion, finely diced
  • 1/4 cup celery, finely diced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tbsp extra virgin olive oil (optional)
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  • Prepare Eggs: Once hard-boiled eggs are cooled, peel and chop them into your desired size. Place in a large mixing bowl.
  • Mash Avocado: In a separate bowl, mash the ripe avocado flesh with the fresh lemon juice until creamy.
  • Combine All Ingredients: Add the mashed avocado mixture to the chopped eggs. Stir in the red onion, celery, fresh parsley, fresh dill, and optional olive oil.
  • Season: Season generously with salt and freshly ground black pepper. Taste and adjust seasonings as needed, adding more lemon juice or herbs if desired.
