- 12 small (6-inch) flour tortillas
- 12 slices American cheese
- 1/2 cup mayonnaise
- 1/4 cup ketchup
- 1 tbsp yellow mustard
- 1 tbsp dill pickle relish
- 1/2 tsp smoked paprika
- 1/4 cup finely shredded iceberg lettuce
- 1/4 cup thinly sliced red onion
- 1/4 cup thinly sliced dill pickles
- Salt and black pepper to taste
- Optional: Thinly sliced tomato, jalapeños
Instructions
- Step 1: Prepare Secret Sauce. In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle relish, and smoked paprika. Cover and refrigerate.
- Step 2: Portion Beef. Divide ground beef into 12 equal 2-ounce balls. Season with salt and pepper.
- Step 3: Smash Patties. Heat a cast-iron skillet over high heat. Place a beef ball in the hot pan, cover with parchment paper, and smash firmly with a spatula until very thin. Cook 2-3 minutes until crispy, then flip. Immediately top with cheese slice, cook 1-2 minutes until melted. Transfer to a plate. Repeat with remaining beef.
- Step 4: Warm Tortillas. Briefly warm tortillas in a dry skillet, microwave, or over an open flame until pliable.
