  • 1/2 cup chopped toasted pecans or walnuts (or croutons/seeds)
  • 1/2 cup fresh berries (strawberries, blueberries) or thinly sliced apple/pear
  • 1/4 cup dried cranberries or cherries
  • 1/4 cup crumbled goat cheese, feta, or shaved Parmesan (optional)
  • For the Vinaigrette:
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar or white wine vinegar
  • 1 teaspoon maple syrup or honey
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste
  • Optional: 1 teaspoon finely minced shallot or garlic

Instructions

  • Gently wash and thoroughly dry your spring mix greens using a salad spinner. Set aside in a large bowl.
  • If using nuts, toast them lightly in a dry skillet over medium heat until fragrant, then let cool.
  • Prepare all your chosen add-ins: chop fruits, crumble cheese, etc., and have them ready.
  • In a small bowl, whisk together the olive oil, vinegar, maple syrup (or honey), Dijon mustard, salt, pepper, and optional minced shallot/garlic until well combined and emulsified. Taste and adjust seasoning as desired.
  • Just before serving, add the toasted nuts, fresh fruit, dried fruit, and cheese (if using) to the bowl with the spring mix.
