  • 2 cups heavy cream (very cold)
  • 1/2 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 lb fresh strawberries, washed, hulled, and sliced
  • Optional: 1/2 teaspoon lemon zest
  • Optional: Extra powdered sugar for dusting

Instructions

  • 1. Bake Croissants: Follow package instructions for thawing, proofing, and baking your frozen croissant dough. Bake until deeply golden brown and puffed. Allow to cool completely on a wire rack.
  • 2. Prepare Strawberries: While croissants cool, wash, hull, and slice your fresh strawberries.
  • 3. Make Whipped Cream: In a large, chilled mixing bowl, combine cold heavy cream, powdered sugar, and vanilla extract (and optional lemon zest). Using an electric mixer, whisk on medium-high speed until stiff peaks form.
  • 4. Assemble: Once croissants are completely cool, carefully slice each croissant horizontally about two-thirds of the way through with a serrated knife, leaving a hinge.
  • 5. Fill Croissants: Spoon or pipe a generous amount of whipped vanilla cream into the center of each croissant. Arrange sliced strawberries over the cream.
  • 6. Garnish & Serve: Lightly dust with extra powdered sugar just before serving for a beautiful finish. Enjoy immediately!
