- 6–8 frozen croissant dough pieces (such as Jus-Rol)
- 2 cups heavy cream (very cold)
- 1/2 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 1 lb fresh strawberries, washed, hulled, and sliced
- Optional: 1/2 teaspoon lemon zest
- Optional: Extra powdered sugar for dusting
Instructions
- 1. Bake Croissants: Follow package instructions for thawing, proofing, and baking your frozen croissant dough. Bake until deeply golden brown and puffed. Allow to cool completely on a wire rack.
- 2. Prepare Strawberries: While croissants cool, wash, hull, and slice your fresh strawberries.
- 3. Make Whipped Cream: In a large, chilled mixing bowl, combine cold heavy cream, powdered sugar, and vanilla extract (and optional lemon zest). Using an electric mixer, whisk on medium-high speed until stiff peaks form.
- 4. Assemble: Once croissants are completely cool, carefully slice each croissant horizontally about two-thirds of the way through with a serrated knife, leaving a hinge.
- 5. Fill Croissants: Spoon or pipe a generous amount of whipped vanilla cream into the center of each croissant. Arrange sliced strawberries over the cream.
- 6. Garnish & Serve: Lightly dust with extra powdered sugar just before serving for a beautiful finish. Enjoy immediately!
