These homemade Strawberry Peanut Butter Cups combine rich chocolate, creamy peanut butter, and sweet strawberry jam for an irresistible dessert. Perfect for any occasion, they are surprisingly easy to make and guaranteed to be a crowd-pleaser.

- 12 oz (340g) good quality chocolate (milk or dark), chopped or chips
- 1 cup (240g) creamy peanut butter
- 1/2 cup (60g) powdered sugar
- 2 tbsp (28g) unsalted butter, softened
- 1/2 cup (120g) strawberry jam or preserves
- Optional: pinch of sea salt for topping
Instructions
- Prepare Liners: Place 24 mini paper or silicone cupcake liners in mini muffin tins.
- Melt First Chocolate Layer: Melt 6 oz of chocolate. Spoon about 1 teaspoon into each liner, swirling up the sides to create a base. Chill for 5-10 minutes until set.
- Make Peanut Butter Filling: In a bowl, combine peanut butter, powdered sugar, and softened butter. Mix until smooth and firm.
- Layer Filling: Remove chilled shells. Press about 1/2 teaspoon of peanut butter filling into each shell, creating an even layer.
- Add Strawberry: Spoon about 1/4 to 1/2 teaspoon of strawberry jam onto the center of the peanut butter layer.
- Melt Top Chocolate Layer: Melt the remaining 6 oz of chocolate.
- Top Cups: Carefully spoon melted chocolate over the strawberry layer, ensuring it’s fully covered. Gently tap the tin to smooth.
- Chill: Refrigerate for at least 30 minutes, or until completely firm.
- Serve: Enjoy chilled or at room temperature! Store in an airtight container in the fridge.
