Description
This refreshing salad combines crisp cucumbers, creamy fresh mozzarella, and sweet cherry tomatoes with a bright herb vinaigrette. It’s the perfect no-cook dish for warm days and a fantastic side to any meal.

- 2 large English or 4–5 Persian cucumbers, sliced or diced
- 1 pint cherry or grape tomatoes, halved
- 8 oz fresh mozzarella pearls (bocconcini or ciliegine), drained
- 1/4 cup finely minced red onion (optional)
- 1/4 cup fresh basil, chopped
- 2 tbsp fresh dill, chopped
- For the Dressing:
- 1/4 cup extra virgin olive oil
- 2 tbsp white wine vinegar or apple cider vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- 1/2 tsp sugar (or to taste)
- Salt and freshly ground black pepper to taste
Instructions
- 1. Prepare Vegetables: Wash and prepare all vegetables. Slice cucumbers, halve tomatoes, mince red onion, chop basil and dill. Drain mozzarella.
- 2. Make Dressing: In a small bowl, whisk together olive oil, vinegar, Dijon mustard, minced garlic, sugar, salt, and pepper until emulsified. Taste and adjust seasonings.
- 3. Combine & Dress: In a large bowl, gently combine cucumbers, tomatoes, red onion, mozzarella, basil, and dill. Pour about three-quarters of the dressing over the ingredients.
- 4. Chill & Serve: Gently toss to coat. Cover and refrigerate for at least 30 minutes to allow flavors to meld. Before serving, give a final toss, adjust seasoning if needed, and enjoy your amazing salad!
