Instructions

  • 1. Prepare Cucumbers: Slice cucumbers into 1/4-inch rounds or half-moons. Place in a colander, toss with 1 tsp salt, and let sit for 15-20 minutes. Squeeze out excess water and pat dry.
  • 2. Whisk Dressing: In a bowl, combine gochugaru, minced garlic, soy sauce, rice vinegar, sugar, and sesame oil. Whisk until well combined and sugar is dissolved.
  • 3. Combine & Marinate: Add the prepared cucumbers to the dressing. Toss gently to ensure all cucumbers are coated. Marinate in the refrigerator for at least 15-30 minutes.
