- 1/2 cup strong brewed coffee, cooled
- 1/4 cup milk (dairy or non-dairy)
- 1–2 tbsp maple syrup or honey, or to taste (divided)
- 1/4 tsp vanilla extract (divided)
- Optional: 1/2 tsp chia seeds
- For the Cream Layer:
- 1/4 cup mascarpone cheese OR full-fat Greek yogurt
- 1 tbsp milk
- 1/2 – 1 tsp maple syrup or honey, or to taste
- Pinch of vanilla extract
- For Garnish:
- 1 tsp unsweetened cocoa powder
- Optional: Crumbled ladyfingers or chocolate shavings
Instructions
- Step 1: Prep the Coffee Mixture: Brew strong coffee and let it cool completely. In a small bowl, combine the cooled coffee with 1-2 tbsp maple syrup and 1/4 tsp vanilla extract. Stir until the sweetener is dissolved.
- Step 2: Combine Oats and Liquid Base: In a jar or container, combine the rolled oats, the coffee mixture, and 1/4 cup milk. If using, add 1/2 tsp chia seeds. Stir well to ensure all oats are submerged.
- Step 3: Prepare the Creamy Layer: In a separate small bowl, whisk together the mascarpone (or Greek yogurt), 1 tbsp milk, 1/2 – 1 tsp maple syrup, and a pinch of vanilla extract until smooth and creamy.
- Step 4: Assemble Your Overnight Oats: Pour the oat mixture into your serving jar. Evenly spoon the creamy mascarpone/yogurt mixture over the oats.
- Step 5: Chill Overnight: Cover the jar tightly and refrigerate for at least 4 hours, but preferably overnight (8+ hours), allowing the oats to soften and flavors to meld.
