- 4 slices sturdy bread (e.g., sourdough, Texas toast)
- 8 oz firm or extra-firm tofu, pressed & cubed
- 1/2 cup buffalo sauce (plus more for serving, if desired)
- 4 slices (or 1/2 cup shredded) melty cheese (e.g., cheddar, Monterey Jack)
- 2–4 tbsp blue cheese or ranch dressing
- 2 tbsp butter or mayonnaise, for spreading
- Optional: 2 tbsp finely diced celery or shredded carrots
- Optional: 1 tbsp sliced green onions
Instructions
- Press and Cube Tofu: Press tofu for 30-60 minutes to remove excess water. Cut into 1/2-inch cubes.
- Marinate Tofu: In a bowl, toss tofu cubes with 1/2 cup buffalo sauce. Let marinate for 15-20 minutes.
- Prepare Bread: Lightly spread butter or mayonnaise on one side of each bread slice.
- Assemble Sandwiches: On the unbuttered side of two bread slices, layer half the cheese. Top with marinated tofu, drizzle with blue cheese/ranch, and add optional add-ins. Top with remaining cheese, then place the other bread slice (buttered side out) on top.
- Grill Sandwiches: Heat a non-stick skillet over medium-low heat. Cook sandwiches for 3-5 minutes per side, until golden brown and cheese is melted.
- Serve: Cut in half and serve immediately with extra buffalo sauce or dressing if desired.
