Ingredients
Scale
- 8 slices stale, thick-cut sourdough or vegan challah bread
- 1.5 cups unsweetened full-fat oat milk or cashew milk
- 2 tbsp ground flaxseed meal
- 2 tbsp maple syrup (plus more for serving)
- 1 tsp pure vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Pinch of salt
- Vegan butter or cooking oil for frying
- Optional toppings: fresh berries, powdered sugar, vegan whipped cream, nut butter
Instructions
- Prepare the Batter: In a shallow dish, whisk together oat milk, ground flaxseed meal, 2 tbsp maple syrup, vanilla extract, cinnamon, nutmeg, and salt until completely smooth. Let sit for 5 minutes to thicken slightly.
- Soak the Bread: Dip each slice of bread into the batter, ensuring both sides are fully coated but not oversaturated. Aim for about 10-15 seconds per side for thick slices.
- Heat and Cook: Heat a lightly oiled non-stick skillet or griddle over medium heat. Once hot, place soaked bread slices onto the pan, ensuring they don’t touch.
- Flip and Brown: Cook for 3-5 minutes per side, or until beautifully golden brown and crispy on the edges, and the interior is cooked through.
- Serve Immediately: Transfer cooked slices to a warm plate or an oven (200°F / 95°C) to keep warm while you cook the remaining slices. Serve with your favorite toppings!
