- For the Fries:
- 3–4 medium Russet potatoes
- 1–2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- For the Vegan ‘Cheese’ Sauce:
- 1 cup raw cashews (soaked and drained)
- 1/2 cup nutritional yeast
- 1 cup unsweetened plant milk (almond, soy, or oat)
- 2 tablespoons tapioca starch
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon turmeric (for color)
- 1/2 teaspoon salt (or to taste)
- Optional Toppings:
- Vegan bacon bits
- Sliced green onions
- Sliced jalapeños (fresh or pickled)
- Diced tomatoes
Instructions
- 1. Prepare the Fries: Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C). Wash, cut potatoes into 1/4-1/2 inch sticks. (Optional: Soak in cold water for 30 mins, then pat dry). Toss with olive oil, salt, and pepper. Spread on a baking sheet or in an air fryer basket in a single layer. Bake/air fry until golden brown and crispy, flipping halfway.
- 2. Make the Vegan ‘Cheese’ Sauce: Soak cashews in hot water for 15 mins (or cold for 2-4 hrs), then drain. In a high-speed blender, combine soaked cashews, nutritional yeast, plant milk, tapioca starch, garlic powder, onion powder, turmeric, and salt. Blend until completely smooth.
- 3. Cook the ‘Cheese’ Sauce: Transfer blended sauce to a small saucepan. Heat over medium-low, stirring constantly, for 5-8 minutes until thickened, glossy, and gooey. Taste and adjust seasoning.
- 4. Assemble & Serve: Transfer hot, crispy fries to a serving dish. Generously drizzle with the warm vegan ‘cheese’ sauce. Top with your desired optional toppings like vegan bacon bits, green onions, and jalapeños. Serve immediately and enjoy!
