Ingredients

  • 6 cups seedless watermelon, cubed
  • 4 oz block feta cheese, crumbled
  • 1/4 cup fresh mint, chopped
  • 1/4 medium red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • Pinch of flaky sea salt (optional)
  • Freshly ground black pepper (optional)

Instructions

  • Prep Watermelon: Cut watermelon into bite-sized cubes or triangles. Set aside.
  • Prepare Herbs & Onion: Finely chop fresh mint. Thinly slice the red onion.
  • Crumble Feta: Crumble the feta cheese into a large serving bowl.
  • Make Dressing: In a small bowl, whisk together olive oil and lime juice. Season with a pinch of salt and pepper if desired.
  • Combine & Toss: Add the watermelon, red onion, and chopped mint to the bowl with the feta. Pour the dressing over. Gently toss to combine.
  • Chill & Serve: Cover and chill the salad in the refrigerator for 15-30 minutes before serving for optimal flavor and refreshment.
