- 6 cups seedless watermelon, cubed
- 4 oz block feta cheese, crumbled
- 1/4 cup fresh mint, chopped
- 1/4 medium red onion, thinly sliced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lime juice
- Pinch of flaky sea salt (optional)
- Freshly ground black pepper (optional)
Instructions
- Prep Watermelon: Cut watermelon into bite-sized cubes or triangles. Set aside.
- Prepare Herbs & Onion: Finely chop fresh mint. Thinly slice the red onion.
- Crumble Feta: Crumble the feta cheese into a large serving bowl.
- Make Dressing: In a small bowl, whisk together olive oil and lime juice. Season with a pinch of salt and pepper if desired.
- Combine & Toss: Add the watermelon, red onion, and chopped mint to the bowl with the feta. Pour the dressing over. Gently toss to combine.
- Chill & Serve: Cover and chill the salad in the refrigerator for 15-30 minutes before serving for optimal flavor and refreshment.
