  • 8 small corn or flour tortillas (street-taco size)
  • 8 large eggs
  • 1/4 cup milk or cream (optional, for fluffy eggs)
  • 6 slices bacon, or 1/2 lb breakfast sausage/chorizo
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1 ripe avocado, sliced or mashed
  • 1/2 cup fresh pico de gallo or your favorite salsa
  • Fresh cilantro, chopped, for garnish (optional)
  • 1/4 red onion, finely diced, for garnish (optional)
  • Salt and freshly ground black pepper to taste
  • 1/4 teaspoon ground cumin (optional)
  • 1/8 teaspoon chili powder (optional)
  • 1 tablespoon butter or cooking oil

Instructions

  • 1. Cook Protein: In a large skillet over medium heat, cook bacon until crispy. Remove, drain most fat, crumble, and set aside. If using sausage/chorizo, cook until browned, drain fat, and keep warm.
  • 2. Scramble Eggs: Whisk eggs with milk/cream (if using), salt, pepper, cumin, and chili powder. Melt butter in the same skillet over medium-low heat. Pour in eggs and gently push from edges to center until mostly set but still moist. Remove from heat immediately.
  • 3. Warm Tortillas: Heat a dry skillet over medium-high heat. Warm tortillas one at a time for 30 seconds per side until soft and pliable. Keep warm by wrapping in a clean towel or tortilla warmer.
  • 4. Assemble Tacos: On each warm tortilla, layer scrambled eggs, cooked protein, and shredded cheese. The heat will help the cheese melt.
