- Prep Peaches: Peel, pit, and slice peaches. Place in a large bowl.
- Make Brown Butter: In a light-colored saucepan, melt butter over medium heat. Cook, stirring, until amber and nutty brown bits form (5-8 mins). Pour hot brown butter (including bits) over peaches.
- Assemble Filling: Add granulated sugar, cornstarch, vanilla extract, and cinnamon to peaches. Toss gently to coat. Let sit for 10-15 minutes.
- Prepare Topping: In a medium bowl, whisk flour, brown sugar, baking powder, and salt. In a separate small bowl, whisk buttermilk and egg. Pour wet ingredients into dry and mix until just combined; do not overmix.
