- 1 lb ground beef (80/20 recommended)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1 tsp salt, divided
- 1.5 lbs small red or Yukon Gold potatoes, thinly sliced (1/4-inch)
- 1 large onion, diced
- 1 large bell pepper (any color), diced
- 4 slices American cheese or 1 cup shredded cheddar/Monterey Jack
- Heavy-duty aluminum foil
- Optional: Ketchup, mustard, relish for serving
Instructions
- Step 1: Prep Ingredients & Pre-Cook Beef. Dice all vegetables. In a large skillet over medium-high heat, brown ground beef, breaking it apart. Drain excess grease. Season beef with garlic powder, onion powder, 1/2 tsp salt, and pepper.
- Step 2: Assemble Packets. Lay out four large sheets of heavy-duty foil (or double-layer regular foil). Evenly divide and layer potatoes, then onions, bell peppers, and finally the seasoned ground beef onto each foil sheet. Season vegetables with remaining 1/2 tsp salt.
- Step 3: Seal Packets. Bring the long sides of the foil together and fold down several times to create a tight seal. Then, roll up the short ends tightly towards the center to form a sealed packet.
- Step 4: Cook Packets. Place sealed packets directly on medium-hot coals or on a grill grate over medium heat. Cook for 25-35 minutes, turning every 10-15 minutes, until potatoes are tender when pierced.
- Step 5: Add Cheese & Finish. Carefully remove packets from heat. Gently open each packet (watch for steam!) and top with cheese slices or shredded cheese. Reseal loosely and return to heat for 3-5 minutes, or until cheese is melted and bubbly.
- Step 6: Serve. Let packets rest for 5 minutes before fully opening. Serve hot with your favorite condiments.
