These amazing foil packets cook a complete cheeseburger meal right over the campfire or grill! Juicy burgers, tender veggies, and gooey cheese make for an unforgettable outdoor dining experience with easy cleanup.

- 1.5 lbs lean ground beef (80/20 preferred)
- 2 large Russet potatoes, diced into ½-inch cubes
- 1 large onion, sliced
- 1 bell pepper (any color), sliced
- 2 carrots, thinly sliced or julienned
- 1 tbsp olive oil (optional, for tossing veggies)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- ½ tsp black pepper
- 4–6 slices of cheese (Cheddar, American, or Pepper Jack)
- Heavy-duty aluminum foil
- Optional add-ins: cooked bacon bits, sliced mushrooms, jalapeños
Instructions
- 1. Prepare Ingredients: In a bowl, gently mix ground beef with ½ tsp garlic powder, ½ tsp onion powder, ½ tsp salt, and ¼ tsp pepper. Form into 4-6 patties. In another bowl, toss diced potatoes, onion, bell pepper, and carrots with the remaining garlic powder, onion powder, salt, pepper, and optional olive oil. Ensure everything is well coated.
- 2. Assemble Packets: Tear off 4-6 sheets of heavy-duty foil (approx. 18×18 inches). For each packet, layer a portion of potatoes on the foil, top with a beef patty, then surround and cover with the seasoned mixed vegetables.
- 3. Seal Packets: Bring the long sides of the foil together over the ingredients and fold down tightly to create a strong seam. Roll up the short ends tightly to completely seal the packet, ensuring no gaps.
- 4. Cook: Place sealed packets directly on hot campfire coals (not flames) or a medium-hot grill. Cook for 25-35 minutes, turning every 10 minutes to promote even cooking.
- 5. Add Cheese & Rest: After 20-25 minutes, carefully open a packet to check if potatoes are tender and burger is cooked. If so, place a slice of cheese over each patty, reseal loosely, and return to heat for 3-5 minutes until cheese is melted. Remove from heat and let packets rest for 5 minutes before opening fully and serving.
